Re:purpose

Each event will see a different guest chef take over Avia’s kitchen for a one-off
Sunday lunch, working with ingredients sourced from farms, bakeries, and
suppliers to create something entirely unique and delicious.
Re:Purpose is a chance for chefs to challenge themselves by working with
ingredients that might otherwise go to waste, while also creating an
incredible shared experience for diners. It’s about celebrating hospitality and
sustainability in equal measure.
Beyond the kitchen, Re:Purpose extends its mission to sustainability in the
arts, Avia is partnering with Sydney-based potters to transform glass waste
from the restaurant into handmade crockery and art pieces, some of which
will be available for purchase, with a portion of proceeds going to OzHarvest.
For diners, the experience promises a long Sunday lunch and a chance to be
part of something bigger than just a shared meal. Guest chefs will introduce
their dishes and share insights on how they’ve repurposed ingredients,
adding an educational element to the experience.
